… Miss Kellie is finally 21!!!

Last night a bunch of Kellie’s friends met us (and her two best friends from out of town!) at a local place for dinner called Restaurant Salaam. They have a wide array of dishes from curry to falafel wraps to spanakopita, but I typically always end up ordering something with a Mediterranean flair. Last night was no different.
My meal started out with the Salaam salad – lettuce topped with carrots, cucumbers, red pepper, feta and walnuts. I took the walnuts off. It was dressed with their housemade pomegranate vinaigrette I typically don’t love sweet dressings, but this one wasn’t bad.
For my main entree, I ordered Grilled Chicken Kabobs. The flavor in the dish was really bright and delicious. I absolutely loved the charred vegetables – onions, pepper, and zucchini. It came with a yogurt for dipping, and that took the flavor to another level for me. It was so refreshing!
To be honest, I didn’t have any of the rice because I loved the chicken so much. I had every piece except one… and sorry about that photo. I got a little too excited for my good and dug in before taking a picture
After dinner, some of us came back to our apartment, where we sang happy birthday and had some of Kellie’s “cake,” which like I said yesterday was just strawberry jello and whipped coconut milk (made exactly like this Vegan Cool Whip). The “frosting” was so easy to make. I just let it sit uncovered in the can overnight, and then I whipped it up with some stevia in my food processor. The hardest part was piping it, actually, because there were a few little solid pieces of the coconut milk in the mix.
I’d say her 21st birthday was a success!
Now I have a TON of homework to do, and I want to make sure I leave time to watch the Oscars tonight!
